I absolutely love this drink & i cannot go a day without it. There are many variations of this drink from different parts of india. This one is a savory version called Neer mor; its also called as spiced buttermilk/majige. The sweet version of this drink is called Lassi. And its also called as Chaas. No matter how many names, but it all comes down to 2 basic ingredients – Yogurt & water and the rest is just flavor.
If i’m to market this drink i’d describe it as “The first sip is so refreshing & cooling that its going to take you to a state of relaxation as it touches all the chakras of your body”. Its simply refreshing during the summer heat.
What you need :
Yogurt : 3/4th cup
Water : 2 cups
Salt : 2/4 tsp
Ginger : 1/2 inch piece
Lemon juice : 1 tbsp
Chaat masala : 2/4 tsp (optional)
Mustard seeds : 1/2 tsp
Cumin seeds : 1/2 tsp
Coriander leaves : 1 tbsp chopped
Curry leaves : 1 tbsp chopped
– Add Yogurt, ginger, salt, lemon juice, chaat masala & water in a blender. Blend it all smooth.
(People generally add chilies too, but i skip it. If you prefer chilies, add half chilly too)
– Take a small tempering pan, add 1/2 tsp oil. Once hot, add the mustard seeds and let it crackle. Then add the curry leaves & it will sizzle. Immediately add them to the buttermilk.
– Lastly, pour them to glasses & finish off with some coriander leaves on top.
You should refrigerate these for 15 mins before drinking as its best served cool. Also the flavors will get well blended if you leave it aside for a while.
I prefer to make this using homemade curd, as it tastes totally yum. But store bought yogurt serves good too. 🙂
This has many variations, you can give it a mint flavor by using mint leaves. You can make it sweet by adding sugar instead of salt. You can add small, fine cucumber pieces in it for a crunch.
